Shrimp Paté


Ingredients: (serves about 6 people)


- 1 cup of cooked shrimp peeled and deveined

- 1/4 cup chopped onion

- 1 garlic clove chopped

- One tablespoon of olive oil

- One "cola de rata dried chile" (also known as "chile de arbol)

- 2 tablespoons of mayonaise

- About 4 to 6 taablespoons of whipping cream

- 1 tablespoon cream cheese

- Salt and pepper to taste


In a saucepan heat up the olive oil, add the onion, dried chili and garlic and cook for a couple of minutes until onion is translucent, add the shrimp and cook for one or 2 more minutes. Remove from heat. In a blender add the mayonaise, cream cheese and  about 3 tablespoonscream, blend on high spped and slowly through the feeding tube add the shrimp mixture,add more cream if needed little by little stopping from time to time to scrape the sides of the blender, the mixture should be smooth and not too thick or not too runny, it will set in the fridge for a couple of hours until spreadable consistency. Season with salt and pepper. Chill for a couple of hours  Serve with crackers and decorate with chopped red bell pepper and chopped parsley.
