A classic from Veracruz state located in the gulf of Mexico where spanish mediterranean and Mexican ingredients fuse together creating magic

Chicken Enchiladas with Mango-Chipotle Sauce:

Off the beaten path enchiladas made with mayan spices and mango, can be as spicy or mild as you choose…

Fish Fillet with Cilantro Pesto Sauce:

Fresh catch of the day topped with a mild spicy homemade cilantro pesto

Fish or Shrimp with Citrus Ginger Sauce:

A light and delicate tangy sauce with a nice kick of spice

Pork in Tequila, Orange and Chipotle Sauce:

These 3 ingredients go so good with pork!

Pecan Crusted Mahi-Mahi with Mango Pico de Gallo:

Fresh fillets with a nice crunchy pecan crust served with a mango pico de gallo salsa (if mangoes are not in season, i substitute with pineapple which is just as yummy!)

Green Chicken Mole:

A classic green mole sauce from Puebla state with pumpkin seeds, tomatillos and other delectable Mexican ingredients, highly recommended if you are adventurous. All made from scratch of course!

Pork in Guava Adobo:

 guava is a tropical aromatic fruit that blended with the adobo sauce spices and dried chilies, tastes absolutely incredible!

Fish in Jungle Sauce with Corn Gnochi:

Fresh catch of the day cooked with a green sauce made with exotic mexican herbs, (one of them is called hoja santa translated as "holy" or "sacred" leaf), topped with homemade corn dough gnocchi, very unique!

Spinach and Shrimp Enchiladas with Green Tomatillo and Poblano Sauce:

Topped with melted cheese yum yum!!

Chicken or Pork in "Manchamantel" Mole Sauce:

It hasn´t been defined yet if this delicate fruity spicy mole, is traditional from Oaxaca state, Puebla or Michoacan but it is sure worth trying! The word "manchamantel" means something like

"tablecloth stainer", oh yes, if you get stains it means you enjoyed it!

Chile Relleno Souffle:

A vegetarian meal, a light and "deconstructed" version of a chile relleno

Coconut Refried Beans:

Black  beans infused with natural coconut flavors and my secret spices

Mexican Rice:

The traditional "red" rice cooked with veggies

Cilantro Rice:

A green rice infused with fresh cilantro flavors

White Rice with Fresh Herbs and Veggies Sauteed Seasonal Vegetables:

Healthy, light and very flavorful-infused with my homemade spice mixes

Fresh Green Salad:

Fresh greens and seasonal vegetables topped with one of my homemade dressing, please choose from below:

Poblano Scalloped Potatoes:

My Mexican twist on this scrumptious comfort food, simply delicious!!

Mashed Potatoes:

My homemade version, made with real fresh potatoes

 

 

Lime Coconut Flan:

Topped with caramel sauce

Cream Cheese Flan:

A mixture between a flan and a cheesecake topped with a passion fruit tequila caramel sauce and fresh strawberries

Key Lime Pie:

My version of this classic topped with mango sauce, so good!!

(If mangoes are not in season fresh strawberries will be used)

Guava or Tamarind Cheesecake:

The aroma of the guavas or tamarind infuse this creamy cheesecake with a unique tropical touch, the cookie crumb is homemade, of course!!

Banana Brandy Bread Pudding:

Made with fresh bananas and topped with a caramel sauce

Chocolate Cake with Mole Frosting:

Served with ice cream, a perfect combination of flavors

Mexican Chocolate Cake with Cinnamon:

A rich and yummy cake jazzed up with cinnamon
