Coffee Kahlua Flan





- One can of sweet condensed milk

- One can of evaporated milk

- One shot of espresso coffee

- Two shots of kahlua or any coffee liquor

- 5 eggs

- 3/4 cup sugar ( i highly recommend the mexican sugar instead of the white refined sugar)



         In a round cake pan of 9 in diameter pour the sugar and cook it on medium heat on the stove top until the sugar dissolves and becomes caramel.This is a slow process that you have to watch carefully to avoid the caramel to burn. Set aside. In a mixing bowl  with a whisk or a fork mix thoroughly the sweetened condensed milk, the evaporated milk, the eggs, coffee shot and ONE shot of the Kahlua or any other coffe liquor. Pour this mixture over the caramel using a strainer.  Put the pan inside another pan with water allowing the water to come halfway up the flan pan. This is called "water bath" or Bain Marie"bake  315°F in the oven for about one hour or one hour 15 minutes or until set. Allow to cook completely and refrigerate for at least 2 hours. Run a knife carefully around the flan to separate it from the edges of the pan. Unmold it  in a large platter, drizzle the other shot of coffe liquor on top, cut in slices and serve. You can always add more coffee liquor when serving if you desire!
